In addition to a large-scale reflection carried out by several hands, which re-examines the infrastructures and initiates a transformation of the suburban landscape of Rungis, Marc Mimram Architecture & Ingénierie is developing the totem building. This facility is designed as a succession of educational and museum itineraries, both indoors and outdoors.
The totem building offers a cultural and experiential journey that highlights all the dimensions of gastronomy and its professions. It is structured around different exhibitions, immersive workshops and an educational garden.
Workshops for the general public and practical and theoretical courses intended for students and professionals in the sector will be held in this building in order to make it a key player in the transmission of gastronomy know-how.
